Vegetarian Skillet Chili
Vegetarian Skillet Chili
6 servings
1 tbsp cooking oil
1-2 cloves garlic, chopped
1 cup onion, chopped
1 cup green pepper, chopped
2 cups fresh mushrooms, sliced
1 cup frozen corn, thawed
15 oz canned beans (pinto or red)
8 oz canned tomato sauce
15 oz canned stewed tomatoes
1/2 cup bulgar wheat, uncooked
1/2 cup water
1 tsp dried oregano
1 tsp ground cumin
1 tsp chili powder
1 cup cheddar cheese, grated
1. Heat oil in a large non-stick pot over medium heat.
2. Add garlic, onions, green pepper, and mushrooms. Cook 10 minutes or until vegetable are tender.
3. Add remaining ingredients except cheddar cheese. Reduce heat to low, cover, and cook 20-15 minutes, until bulgar is soft. Stir several times while cooking.
4. Sprinkle with grated cheddar cheese and stir.
