Stan’s Spinach Quiche
Stan’s Spinach Quiche
(aka Hannah’s Spinach Thing)
1 lb Monterrey Jack cheese
1/4 lb butter or margarine
4 eggs
1 cup milk
One 10 oz box frozen chopped spinach
One 4 oz OR 7 oz can chopped green chilies (more chilies - more zing!)
1 cup flour
1 tsp baking powder
1/2 tsp salt
Thaw and drain spinach. Grate the cheese.
Combine the flour, salt, and baking powder.
Smash the butter in a mixing bowl. Add the eggs, milk, and chilies. Stir in flour, salt, and baking powder mix. Stir in the cheese and spinach. (Shortcut: If you have a power mixer, dump all the ingredients in a bowl and mix.)
Pour into an un-greased 9"x13" pan. Bake at 350 degrees F for 45-60 minutes, until slightly brown on the top and edges.
Note: Good hot or cold. Also is an appetizer with wine.

Freezes well, also good with 5 or 6 eggs instead of 4. Only really need 1/2 lb cheese, too.
